recipe followed makes 1 1/2 litres of chicken stock.
Ingredients
- 2 chicken carcasses
- 8 cups of water
- 1 rib celery with leaves, sliced
- 1 carrot, sliced
- 2 bay leafs
- 4 sprigs parsley
- 1 garlic clove
- 1 clove
- 6 peppercorns
- 1/2 tsp dried thyme
- 2 pinches salt
Method
- Combine all ingredients together in large stock pot,
- bring to the boil on low heat then simmer for1 1 /2 hours
- strain removing solids and chill in refrigerator skim and place in container, use sparingly
